    CMC is used in ice cream, pasta, and condiments to increase expansion rate, inhibit ice crystal formation, create a smooth surface and full-bodied texture, solidify pasta and provide stability. CMC is used in yogurt, liquid beverages, and soybean milk because of its strong acid resistance, emulsification, and stability features.
